You can also adjust the volume of each individual track, in case some of them are too loud or something like that. After you're done recording everything, and you wanna hear all the instruments, you simply click once more on the Mute button, and the waveform will turn back to its original color, and you will be able to hear everything fine. It will also not be heard during the recording process. Click on it, and the waveform of the track is gonna turn gray or some other neutral color like that, and on playback, it will not be heard. There should be a button somewhere on that track that either says Mute or just M.
